August temperatures can get pretty muggy and downright hot, and the best way to stay cool is with fresh fruits and veggies – all in one dish! If you are not up for firing the grill or cooking over the stove, forgo your usual warm meal for a fresh salad full of vitamins and protein. Try this watermelon and feta cheese salad recipe. It’s a salad that really packs a punch. Ingredients for Watermelon & Feta Cheese Salad Recipe 1 5-pound watermelon, cubed 2 large cucumbers 3 limes 1 small red onion 1 packet of Greek feta cheese 1 can of pitted black olives mint leaves basil leaves salt extra virgin olives oil jalapeno pepper (optional) Preparation for Watermelon & Feta Cheese Salad Recipe Cube your watermelon into large chunks. Feel free to use a pit-less watermelon for easier eating. Once cubed, add to bowl. Peel your cucumbers. Dice into dice-sized cubes. Add to bowl. Peel and slice your red onion finely. Add to chilled water until preparation is complete. Cube the Greek feta cheese. Add to bowl. Rinse and drain olives. Add to bowl. Clean mint and basil. Add in whole leaves. You can use as much as you like of these herbs but they do pack a punch so 10 leaves each will do the trick. Drain onions from water. Add to bowl. Mix content of bowl well, ensuring you do not squash any of the fruit. Sprinkle with a teaspoon of salt. Sprinkle with 2 to 3 tablespoons of extra virgin olive oil. If you are really daring, add a finely chopped jalapeno pepper for a bit of heat. Add the lime juice. Mix well and serve chilled! Wine Pairing: Great wines to pair with watermelon and the many flavors in this recipe are Riesling or a rosato wine.
