Warm Summer Potato Salad Recipe
If you want to keep your summer dishes warm but fresh at the same time, the best thing to do is to play with variety, textures and hot and cold foods. A warm summer potato salad is great to serve as a side dish at any BBQ. Here is a Warm Summer Potato Salad Recipe ideal for a summer feast! Ingredients for Warm Potato Summer Salad 10 medium sized potatoes 2 red onions ½ pound string beans 5 medium salad tomatoes 2 large zucchini Handful basil 1 can pitted black olives ½ cup extra virgin olive oil ½ cup red wine vinegar Salt Preparation for Warm Potato Summer Salad Bring a large pot of water to boil with potatoes. Once they are fully cooked (you can make sure by sticking a fork into them), drain them and let them slightly cool. Once cool, peel the potatoes. Set aside. Peel your onion and slice thinly. Place all slices in cold water and let sit for a few minutes. Take your string beans and snip off the ends, wash them and boil them until slightly soft. Drain the water. While your string beans are cooking, clean your zucchini and slice into very thin slices. Set aside. Strain the water from your black olives, rinse and set aside. Once all your ingredients are ready, dice your potatoes into large cubes. Drain your red onions. Dice your tomatoes into large chunks. Get a big bowl ready and add your potatoes, string beans, red onions, tomatoes, zucchini, olives and washed basil. Top with extra virgin olive oil, vinegar and a pinch of salt. Mix all very well. The potatoes and string beans will still be fairly warm so serve immediately. This dish is best served with a sparkling wine which will eliminate the residual oil on the palate and add a sense of freshness.
