Ingredients for Scrambled Eggs with Truffle Recipe
• 1 tablespoon of butter 
• 6 eggs 
• 2 tablespoons of water 
• Salt and pepper 
• 1 tablespoon of chopped chives 
• 1 small truffle 

Preparation for Scrambled Eggs with Truffle Recipe
Using a non-stick skillet, turn your burner to medium-low heat and add the butter to the pan to melt. While the butter is melting, vigorously beat the eggs. Add the water to the beaten eggs and mix them together. The water helps the eggs steam as they cook, providing fluffier scrambled eggs

Pour the eggs in the pan with the melted butter. Gently move them about with a rubber or plastic spatula to prevent them from sticking and to provide even heat to the eggs. 
When the eggs are starting to come together, about halfway through cooking, add the salt and pepper to taste

When the eggs are nearly finished, turn off the burner and let them finish cooking in the residual heat of the pan. Sprinkle the chopped chives over the top. 
Using a truffle shaver or a microplane grater, shave thin slices of truffle over the eggs. 
Serve immediately. Serve with a glass of Vermentino.
