Grapes sit at higher elevations in this sub-region than those of the general Chianti region, which allows for a slower ripening, more acidity and more herbal qualities. The wine must age for a minimum of 12 months, and will have a black rooster sticker around the neck of the bottle. These wines have a high acidity and bright red fruit notes like cherry, raspberry, and strawberry rhubarb, making them incredibly food friendly for hearty food dishes.
