Nothing beats a warm pot of minestrone soup during the colder months of the year. If you are wondering about the best ways to get your much needed vitamins this fall, then look no further than this tasty Italian prepared minestrone soup recipe.
What you will need to prepare this dish:
- 100 grams of ham, raw
- 150 grams of pork rind
- 180 grams of zucchini
- 400 grams of cannellini beans
- 200 grams of ditalini pasta
- 400 grams of herbs
- 1 parsley
- 1 chive
- 1 cup of grated Parmigiano-Reggiano cheese
- salt and pepper to taste
This recipe serves a total of six guests. Be sure to adjust portions as you see fit by halving the recipe for three people and doubling it for larger parties of a dozen or so. The total prep time will take 20 minutes and the cook time is estimated to take around 1 1/2 hours total.
Start by cutting the pork rinds up into bite sized strips. Place the cut up ham (or prosciutto) into a sauce pan with chopped up parsley and a single onion. Use a bit of oil to boil up the onion. Once you see that onion starting to boil, add in the rind, herbs, beans, zucchini, and chives. Season the cooking mix to taste using salt and pepper. Simmer the whole mixture and add in the water that was used to cook the beans, in order to make a thicker soup stock. Allow it to simmer after setting to moderate heat. Add in your pasta until it is softened to your level of preference.
